Chia Muffins

 

Over the holidays I visited my grandmother who is the goddess of health and baking. She baked us the most delicious  (and healthy) muffins. They have chia seeds in them, you know like the commercials for the chia plants, cha cha cha chia! The seeds give it a nice crunch. And they are PACKED with vitamins and fiber and keep hunger at bay. These muffins are so healthy and satisfying I know they will become a regular at our house.

Ingredients:

1 tbsp ground chia seeds (can be found at any health food store)

1 1/2 cups whole wheat flour

2 tsp baking soda

1/2 tsp salt

1 cup sweet potato or pumpkin puree

1 cup unsweetened apple sauce ( I like Trader joe’s best)

2 egg whites

1/2 cup agave syrup

2 tsp lemon juice

1 tsp lemon zest

1 tbsp vanilla extract

1/2 cup dried cranberries (I like to add nuts too)

1 tsp cinnamon

Directions:

Mix together wet ingredients. In a separate bowl, mix dry ingredients.

Fold wet ingredients into dry ingredients.

Scoop into muffin tins and bake for 15-20 minutes at 350F

News Anchor, JaQuitta Williams, from CBS news Atlanta came to visit and do a news story on Heidi and her fabulous cookies! Heidi talks about life, the bakery, and making this cookie dream a reality. The piece will air on Tuesday December 13th around 5:15 PM. It will be a couple minutes long. We are so excited. Make sure to tune in!!
